Bar Operations Manager

ppHotel Sorrento is looking for an experienced Bars Operations Manager to take the lead and oversee some of the Mornington Peninsula's most iconic bars: Salt, Front Bar, Rooftop, Shi Hui Shi Bar, Pool Bar, Lounge Bar and our new Lobby Bar. /ppThis senior, hands-on role will work alongside the Beverage Manager and lead the Bar management team and is accountable for the department’s operational and financial performance, workforce, guest experience and service standards. /ppThis opportunity will suit a passionate, hospitality professional who thrives in a fast-paced, high-volume environment and knows how to bring togethergreat people, exceptional service and strong commercial results. /ph3What you’ll do: /h3pFrom busy summer trading and major events to the ever-changing demands of the business,, you’ll ensure we have theright people, resources and plans in placeto deliver consistently. /pulliLead, inspire and develop the Bar management team. /liliTake ownership of departmental performance, budgets and KPIs. /liliPlan staffing, rosters and management coverage around trade and business needs. /liliDrive revenue, productivity and profitability across all venues. /liliOversee recruitment, training, performance and team development. /liliMaintain exceptional service, presentation and guest experience standards. /liliLead operations during busy periods, events and complex trading environments. /liliWork with security providers to manage venue capacity, entry, queues and patron behaviour. /liliEnsure incidents are managed, documented and followed through appropriately. /liliMaintain strong stock control, cellar standards and wastage management. /liliEnsure all venues, equipment and storage areas are maintained to a high standard. /liliMaintain compliance with Victorian liquor licensing, wagering, RSA, safety and hotel requirements. /li /ulh3What we’re looking for: /h3pAconfident, hands-on hospitality leaderwho enjoys being on the floor, developing people and making things happen. /pulliSenior management experience within a high-volume multi outlet bars, hotel or hospitality operation. /liliExperience leading managers and large teams. /liliStrong workforce planning and labour management skills. /liliCommercial understanding and experience managing budgets and KPIs. /liliThe ability to stay calm and make good decisions under pressure. /liliStrong organisational and problem-solving skills. /liliA genuine passion for hospitality and creating memorable guest experiences. /liliA leadership style that is visible, accountable and focused on developing others. /li /ulh3Essential requirements /h3ulliCurrentVictorian RSA /liliValidforklift licence /liliCurrentTAB Venue Manager accreditation /liliFlexibility to work evenings, weekends and public holidays. /liliAvailability aligned to summer and major trading periods. /li /ulh3About us /h3pHotel Sorrento is a family business built on people who care.
