ppFor the opening of the new exclusive Akira Back restaurant, The St. Regis Rome is casting for a Sommelier. /p pThe ideal candidate is able to provide an outstanding customer service to our international guests whilst delivering service to the highest standards. /p pbPOSITION SUMMARY /b /p pReporting to the Specialty Restaurant Manager, the role will be part of the AB Restaurant team, proud to engage our guests and to create exquisite moments. /p pYou are a passionate Sommelier who is always on the lookout for new beverage trends and supervising others to do the same. When you are on the floor, you create energy that is both welcoming and exciting. You take pride in offering our guests a carefully curated wine and sake selection, a warm conversation, and helpful suggestions. Through your expertise, personality and attention to detail, you create memorable experience for our guests while leading by example for the entire team. /p pbCORE WORK ACTIVITIES /b /p ul liRepresent the AB brand and deliver exceptional guest experience. /li liPair and suggest wines and sake that will best complement each particular food menu item. /li liIdentify and propose new wines and sake products to complement existing menu selections. /li liResearch new wine and sake trends and benchmark competitors /li liConduct staff wine and sake tastings with company SOP and applicable laws. /li liConduct period inventories to ensure percentage cost is at or below budgeted levels. /li liOrder and conduct inventory of specialty wine equipment and glassware. /li liCreate and update wine and sake lists for outlets or restaurants. /li liDesign and implement wine and sake promotions and guest engagement initiatives. /li liMeet with wine and sake distributors, wineries, and purveyors to stay abreast of latest products and ensure positive vendor relationships. /li liCurate, update and maintain wine and sake lists. /li liAttend wine tastings and training to continue self-education and development. /li liAnswer guest questions or concerns regarding the origin, vintage, and style of various wines. /li liDecant wines appropriately to the wine type. /li liIssue, open, and serve wine/sake/champagne bottles, ensuring guest satisfaction. /li liMonitor inventory of wine cellar, ensuring appropriate quality and amounts of wine, proper storage and disposal of wines, and replenishing cellar as needed. /li liTrain and educate server and bartender staff on wine origin, vintage, styles, and pairings. /li liComplete closing duties, including storing all reusable goods, breaking down goods, cleaning all equipment and areas, returning equipment to proper locations, locking refrigerators, restocking items, turning off lights, locking doors, and completing daily cleaning checklist. /li liEnsure that coolers, freezers are set at the correct temperatures and labeled and record equipment and food temperatures on HACCP chart. /li liComplete scheduled inventories for wine and sake at the end of each month. /li liReport any employee, guest, and/or vendor incidents and accidents to management and Loss Prevention at the time of the incident and/or accident. /li liAct as a key operational leader within the restaurant, ensuring service standards are maintained. /li liCount bank at end of shift, complete designated cashier reports, resolve any discrepancies, drop off receipts, and secure bank /li liUpdate MICROS system menus as required. /li liContribute to team effort by accomplishing related results as needed. /li liFollow Standard Operating Procedures and brand identity guidelines /li liComply with all health, safety and hygiene standards and policies. /li liBalance the cash register at the start and close of each shift. /li liHelp others when required /li /ul pbCANDIDATE PROFILE /b /p ul liA team Player with flexible positive attitude. /li liPassion for the hospitality industry. /li liPossess a good command of English and Italian. /li liExperience as Sommelier in luxury hospitality, Asian, Japanese or fusion dining concept preferred. /li liPossess a good command of English and Italian. /li liExceptional storytelling and guest engagement skills. /li liAn excellent verbal manner and proven customer service skills. /li liGood organization skills with an attention to detail. /li liAble to work in a fast paced environment remain calm under pressure. /li liBe able to demonstrate experience in complaint handling. /li liStrong grooming standards and professional presentation. /li liAvailability to work late nights, weekends and bank holiday as we operate 365 days a year. /li /ul pbWhat we offer /b /p ul liDiscounts on hotel rooms, gift shop items, food and beverage across the company. /li liLearning and development opportunities online, on the job and in class. /li liCharity events, Wellbeing activities through the TakeCare program. /li liExperienced management motivated and engaging colleagues. /li liCanteen service and uniform. /li /ul pAt Marriott International, we are dedicated to being an equal opportunity employer, welcoming all and providing access to opportunity.
