Commis de Pastry - Splendido Mare, A Belmond Hotel Portofino

Splendido Mare, A Belmond Hotel, part of the LVMH Group, is a charming guesthouse in the heart of the Portofino. Its celebrated restaurant, DaV Mare, embodies all the pleasures of piazzetta living through refined cuisine, curated in partnership with the 3-Michelin-star Cerea family. Awash with nautical spirit, our gem on the Italian Riviera celebrates the art of Ligurian living in its purest form. 

We are looking for a Commis de Pastry to join our DaV Mare team.

The ideal candidate is passionate about hospitality and comfortable with challenges. He/She is willing to provide authentic and luxury experiences, demonstrating care, confidence, curiosity and community.

He/She will reports a Executive Chef.

Main Duties & Responsabilities:

• Assist the Chef de Partie - Pastry in the preparation of a wide range of pastry, dessert, and bakery items, following established recipes and standards.
• Prepare necessary ingredients (weighing, cutting, mixing) and equipment for various productions.
• Perform basic tasks such as simple decorating, glazing, and assembling desserts.
• Actively collaborate with the rest of the pastry and kitchen team to ensure an efficient workflow.
• Maintain constant attention to detail and quality at every stage of the process.

Requirements

• Culinary school diploma or professional pastry certificate.
• Previous experience, even brief, in a professional kitchen or high-end pastry shop is a plus.
• Strong passion for pastry and a desire to learn and grow professionally.
• Reliability, precision, and attention to detail.
• Ability to work in a team and follow instructions.
• Basic knowledge of HACCP regulations.

• Start date: October 2026 to End date: January 2027, with the aim of a continuous collaboration over subsequent seasons at Splendido Mare and a career path; 
• Salary as by CCNL + increase based on seniorirty and skill level, separate payslip for 13°,14° and TFR;
