About Orient Express La Minerva

Considered as the beloved capital of the Orient Express legend, Rome is the first Orient Express hotel, La Minerva, in 2025. Orient Express has entrusted the interior architecture and artistic direction of the hotel Hugo Toro. The former Palazzo Fonseca is a sumptuous 17th-century palace with a huge, majestic façade. A place of memory still adorned with its Roman columns, sculptures by Rinaldo Rinaldi, a disciple of Canova, and the fascinating goddess Minerva. At the end of 2024, a new décor and interior inspired by the Roman domus and the riches of the "Eternal City" will be revealed with a new touch of contemporary elegance.

Job Description

The Pastry Chef is responsible for planning, preparing, baking, decorating, and presenting a variety of pastries, desserts, breads, cakes, and other baked goods while maintaining the highest standards of quality, hygiene, and food safety. The role requires creativity, attention to detail, and strong organizational skills to ensure an exceptional guest experience.

• Prepare and bake a wide range of pastries, cakes, desserts, breads, and specialty baked products.
• Design and develop new dessert menus, seasonal items, and customized products.
• Ensure consistency in taste, presentation, and quality of all baked goods.
• Decorate cakes, pastries, and desserts according to company standards and customer requirements.
• Monitor inventory levels and order ingredients and supplies as needed.
• Maintain clean and organized workstations in compliance with food safety and sanitation regulations.
• Supervise, train, and mentor pastry staff.
• Control food costs, minimize waste, and manage portion control.
• Ensure all products are prepared and stored according to health and safety standards.
• Collaborate with the Executive Chef and kitchen team to develop menu concepts and special event offerings.
• Stay updated on industry trends, techniques, and ingredients.

Qualifications

• Proven experience as a Pastry Chef, Pastry Sous Chef, or similar role.
• Professional culinary or pastry arts qualification preferred.
• Strong knowledge of baking techniques, ingredients, and pastry production.
• Creativity and artistic skills in dessert presentation and decoration.
• Knowledge of food safety, HACCP, and sanitation standards.
• Ability to work in a fast-paced environment and under pressure.
• Excellent organizational and time-management skills.
• Leadership and team management abilities.
• Flexibility to work evenings, weekends, holidays, and shifts as required.
