Some requirements may exclude individuals who pose a direct threat or significant risk to the health and safety of themselves, other employees or guests. /p h3SKILLS /h3 ul liAbility to prioritize, organize and delegate work assignments. /li liAbility to direct performance of kitchen staff and follow up with corrections where needed. /li liAbility to promote positive work relationships with service personnel and other departments. /li liAbility to ascertain staff training needs and provide such training. /li liAbility to perform job functions with attention to detail, speed and accuracy. /li liAbility to work well under pressure of organizing and attaining production schedules and timelines. /li liAbility to use all senses to ensure quality standards are met. /li liAbility to operate, clean and maintain all equipment required in job functions. /li liAbility to plan and develop menus and recipes. /li liAbility to perform job functions without direct supervision. /li /ul h3JOB FUNCTIONS /h3 ul liMaintain complete knowledge of and ensure staff's compliance with all departmental/hotel policies and procedures. /li liEstablish the day's priorities and assign production and prep task to staff to execute. /li liCommunicate additions or changes to the assignments as they arise throughout the shift. Identify situations, which compromise the department's standards and delegate these tasks. /li liRequisition the day’s supplies and ensure that they are received and stored correctly. Communicate needs with Purchasing /Storeroom personnel. Ensure quality of products received. /li liEnsure that staff report to work as scheduled; document any late or absent employees. /li liCoordinate breaks for staff. /li liInspect grooming and attire of staff; rectify any deficiencies. /li liEnsure that recipe cards, production schedules, plating guides, photographs are current and posted. /li liCheck Micros printers on the line; ensure they are in working order and there is enough paper available for the shift. /li liMonitor performance of staff and ensure all procedures are completed to the department standards; rectify deficiencies with respective personnel. /li liBe aware of any shortages and make arrangements before the item runs out. /li liControl that staff is informed of all daily specials. /li liObserve guest reactions and confer with service staff to ensure guest satisfaction. /li liPromote positive guest relations at all times. /li liBe familiar with all hotel services/features and local attractions/activities to respond accurately to any guest inquiry. /li liMonitor and handle guest complaints by following the instant pacification procedures and ensuring guest satisfaction. /li liEnsure that staff maintain and strictly abide by state sanitation/health regulations and hotel requirements. /li liMaintain proper storage procedures as specified by Health Department and hotel requirements. /li liEnsure that excess items are utilized efficiently. /li liMonitor and ensure that all closing duties are completed to standard before staff sign out. /li liFoster and promote a cooperative working climate, maximizing productivity and employee morale. /li liOversee and direct training of new hires in specified phases of the restaurant operation. Maintain an on-going training program for existing staff. Reevaluate positions in the restaurant and make changes wherever necessary. /li liProvide feedback to staff on their performance; handle disciplinary problems and counsel employees according to hotel standards. /li liConduct scheduled performance appraisals. /li liInterview and hire new personnel according to hotel policies and standards. /li liPrepare weekly work schedules for all personnel in accordance with staffing guidelines and forecasted labor costs. Adjust schedules throughout the week to meet business demands. /li liDocument pertinent information in the log book and follow up on items noted during other shifts. /li liSuccessful completion of the training/certification process. /li /ul h3SECONDARY FUNCTIONS /h3 ul liPlan and conduct monthly departmental meetings. /li liAttend weekly staff meetings, FB meetings, pre-convention meetings. /li liReturn business telephone calls. /li liPerform at special events and off-premise functions. /li liSchedule and conduct month-end inventories. /li liPrepare menu analysis and recipe costing. /li /ul h3NOTE /h3 pA review of this description has excluded the marginal functions of the position that are incidental to the performance of fundamental job duties.
